Here's the answer. Gewürztraminer is one of the Noble Wines of Alsace France, an area with a similar climate to ours at Ashton. Gewürztraminer is often made into a sweet wine but in that part of Europe it may be made into a dry style. Our wine was fermented in seasoned French oak barrels and shifted to small stainless steel tanks where it fattened up and gained complexity on its dead yeast cells (lees). Drink now with such foods as flavoursome sausages, smoked fish or cheeses, or age for at least 3 years. Over time the wine's young spicy, grapefruit flavours may well develop into those of fresh baked gingerbread."
