Ashton Hills Vineyard (Stephen George) says about the 2006 Chardonnay:

"With a climate similar to parts of Burgundy it was no surprise that chardonnay was first planted during the Adelaide Hills' wine revival in the early 1980's. Today the variety is still the region's most widely grown and in the 2007 vintage accounted for 26% of the total 26,000 tonne harvest.

Our own chardonnay vines are more than 25 years old and our winemaking aim is for a complex style of chardonnay with clean and healthy new-world fruit complemented by old-world wine-making techniques.

The 2006 was made from dry-grown, low-yielding grapes with fermentation in new and seasoned French oak using natural and cultured yeasts. This was followed by a partial malolactic-fermentation, stirring of and maturation on yeast lees and bottling under screwcap."

Philip White, now writing for Adelaide's Independent Weekly wrote about this wine in early November:-

"After 25 years of intense experimentation in this vineyard, Steve George has finally made the best chardonnay yet from the Piccadilly Valley vignoble. I tasted it after a day bathing in Grand cru Chablis, which served only to make this look evey more gorgeous. While it develops a husky gunsmoke edge, its aroma's a seductive swirl of daikon, salsify, sorrel, dried apple, honeydew melon, feijoa, gently gingery, spicy oak, and only Bacchus really knows what. Its mild viscosity wraps harmoniously about its firm natural acidity. Sinuous, supple, beautifully structured, it brings dreams of squid, octopus, snails, frog legs...Brilliant! 94+ points."
